"Wild horses" was an idiom for bits of low-lying fog, because they looked like wild horses. "Clouds of dust" take on shapes. "The breath that people blow at each other" is, among other things, the things that people say, language, which means different things to different people. (Are we talking or just blowing breath at each other? he asks in 2:04.) The items in this inserted list are all things that are open to interpretation.
